Trained at the Scuola Italiana Pizzoioli pizza school in Italy, in 2018, Chef Marco Caveglia opened the first Tuscan Wolf Pizzeria in Canada in downtown Whitby in Ontario. The casual brand features a wide menu featuring authentic Italian cuisine including antipasti, salads, pastas, and over 100 unique pizzas — from traditional tomato-based pies to Italian-style white pizzas and specialty creations. In 2024, the company launched its franchise program and in mid-2025, a second Tuscan Wolf Pizzeria opened in a 4000 square foot location on William St in Cobourg, a community located about 70 kilometres east of Whitby. Last week, the chain announced that Tuscan Wolf Pizzeria is opening its third location in Spring in the Waterloo Region in southwestern Ontario. The 3200 square foot street front location is opening at 52 Main St in Galt. Ryan Kaitting at Cushman & Wakefield Waterloo Region is responsible for the transaction and added that the restaurant chain is continuing a conservative operator-driven expansion, typically seeking 2500 to 3000 square foot locations.
