
This week, the Quebec City-based quick service restaurant Ashton enters the Montreal market with a franchise location in the food court at Complexe Desjardins in downtown Montreal. And in addition to other food court opportunities, the franchise chain of about 25 restaurants, known for its poutine menu, continues to source locations with drive-thru options throughout Quebec. The target size is about 2500 square feet. Originally launched as a seasonal mobile food operation in the late 1960s, Ashton has grown into one of the Quebec City region’s well-known quick-service restaurant chains. The menu features fries, hamburgers, hot dogs, roast beef sandwiches, and its signature poutine. In 2022, Quebec City restaurateurs Jean-Christophe Lirette and Emily Adam acquired the company and introduced a refreshed brand identity and modern restaurant design. Under their leadership, Ashton has embarked on an ambitious expansion strategy, targeting new markets across several regions of Quebec while building on the chain’s long-standing reputation for quality and value. Manon Larose, Michelle Marcotte-Blart and Kayla Zakuta at Urban Reform Immobilier have been retained to handle the site selection.
