Introduced in early 2024 by Aurélie Désy Bédard, Mark Uhlmann, Alex Poirier and Alex Van Dieren, Bobino Bagel is an Outaouais-based food concept specializing in Montreal-style bagels, combining traditional preparation with a fresh, contemporary café experience. At its first location at 61 rue Laurier in Hull, company makes its bagels by hand and bakes them in a wood-fired oven in full view of customers, emphasizing freshness, craftsmanship and an engaging in-store experience. Its menu features a broad selection of handmade bagels, with toppings or incorporated into sandwiches. The sandwich menu includes breakfast, BLT, smoked salmon, Greek, chicken-brie-pear, Bobino and vegetarian options. Bobino also offers locally sourced products and catering services and the bagels are also available through a network of retail outlets, including several IGA stores in the Outaouais region. Last week, the brand opened a second location, joining the long-established cheese shop La Trappe a Fromage at 200 rue Bellehumeur in Gatineau. In a report in digital news media Le Droit, the company suggested potential further expansion once this second unit is established.
