Traditional Recipes & Artisanal Spirit……Traditional Recipes & Artisanal Spirit……Midori Ramen is a Toronto-based Japanese ramen chain built around authentic craftsmanship, omotenashi-style hospitality, and chef-driven culinary tradition. Founded by veteran Japanese chefs Masaru Ogasawara and Natsuhiko Sugimoto in 2021 in Toronto’s Queen West neighbourhood, the brand specializes in rich yet healthier chicken-based tori paitan broth as an alternative to traditional pork ramen, alongside vegetarian options such as its creamy cauliflower broth. Midori emphasizes premium ingredients, fresh noodles, including thick, thin, and kale varieties, and customizable toppings designed to balance flavour and nutrition. Part of the franchisor and brand management company Accencis Group, the chain counts five locations in the Greater Toronto Area, a location in Edmonton and an opening in Halifax in the Fall and plans for expansion into major Canadian cities through franchising. Tao Yang at CBRE Ltd. is responsible for the chain’s expansion in the Ontario market with the present concentration on the Toronto market. Highly visible locations in the 1000 to 2000 square foot range are required.
