Experienced bakers Cindy Feng and Novell Fallar introduced the Toto micro-bakery concept with the birth of their signature sourdough starter. The levain starter, named Tito, forms the foundation of its sourdough baking. Emphasizing local suppliers and seasonal ingredients, Tito Toronto has expanded beyond farmers’ markets and pre-orders, and earlier this month opened a 1500 square foot artisan bakery storefront on Bathurst St, just south of Glengrove Ave West in Toronto’s Englemount-Lawrence area. The artisanal bakery specializes in naturally leavened sourdough breads, hand-laminated croissants, Danish pastries, cakes and other sweet and savoury treats. Its signature products include traditional and creatively flavoured panettone, with varieties such as ube coconut, alongside babka, focaccia, financiers and seasonal pastries. The business also offers baking classes, events and corporate orders. Future plans have not been announced.
